In ancient Egypt there was a story of a god called "Horus"(similar to Jesus). He was the son of Osiris and Isis. Horus, being the sun or the light, had a enemy known as Set(similar to Satan). Set was the brother of Isis and was the personification of the darkness or night. Set killed Osiris so that he can rule the world. So now Horus battles Set throughout everyday. Metaphorically speaking, every morning Horus would win the battle against Set while in the evening Set would conquer Horus and send him into the underworld. Horus wounded his eye during the battles against his brother Set.
This is why the symbol of Horus is one eyed. They use is as a mockery to Horus/Jesus.
